Spicy Teriyaki Burger with Grilled Pineapple

These Hawaiian-style Teriyaki Burgers with Grilled Pineapple deliver a spicy kick! Juicy beef patties are drenched in a sweet and spicy teriyaki sauce, then topped with grilled pineapple and zesty red onion.

May is National Burger Month and my food-blogger friends and I, led by Kita from Girl Carnivore, are celebrating all month long by sharing our unique burger creations. 

In the past years, I’ve shared my Vietnamese Lemongrass Pork Bahn Mi Burger and my Korean Bulgogi Burger with Gochujang Mayo recipes. 

This year, I’m back celebrating Burger Month with one of my favorite burgers: Hawaiian-style SPICY TERIYAKI BURGERS WITH GRILLED PINEAPPLE.

Keep your napkins handy. These juicy burgers are glazed and drenched in sweet and sticky teriyaki sauce with a spicy kick, then topped with grilled pineapple and zesty red onion. 

How to Make Spicy Teriyaki Burgers with Grilled Pineapple

We’ll start by preparing the teriyaki sauce. You can make your own teriyaki sauce using the steps below, or use your favorite store-bought teriyaki sauce in a pinch.

Prepare the teriyaki sauce by combining 1/2 cup of water, 3 tablespoons soy sauce, 1 tablespoon honey, 1 tablespoon mirin, 2 tablespoons brown sugar, 1 1/2 tablespoons cornstarch, and 2 teaspoons sriracha.

If you prefer a plain Teriyaki Burger without the spice, simply omit the sriracha.

If you are using store-bought teriyaki sauce, add 1 teaspoon of sriracha for every cup of teriyaki sauce to make it spicy.

Bring the sauce ingredients to a boil in a small saucepan over medium-high heat. Continue to stir or whisk the sauce until it thickens.

Divide 1 pound of ground beef into 4 individual quarter-pound burger patties. You can use a burger press, or just use your fingers for this task. 

Place the burger patties on wax or parchment paper for easy handling. 

Season each side of each burger patty with salt, pepper, and garlic powder

Gently place the burger patties on a grill or on a skillet. Allow the burger to sear for about 2 minutes before flipping them over and searing the other side for another minute (or longer if you prefer your burgers well done)

Baste each side of the burger with the teriyaki sauce while it is still on the grill/skillet.

When the burger patties are cooked, set them aside, then set 4 pineapple slices on the grill or skillet. 

Grill the pineapple for just 1 minute on each side.

Now we are ready to assemble the burgers! Build your Teriyaki Burger in this recommended sequence:

  1. Bottom burger bun
  2. Teriyaki sauce
  3. Lettuce leaves (use your favorite type of lettuce)
  4. Burger patty
  5. Teriyaki sauce (don’t skimp on this!)
  6. Grilled pineapple ring
  7. Sliced red onion
  8. Top burger bun (with the bottom side smothered with even more teriyaki sauce, of course!)

Teriyaki Burgers are meant to be messy. Don’t be afraid to drench it in teriyaki sauce. 

Serve your Spicy Teriyaki Burgers with your favorite sides. For me, it has to be french fries! Pairing it with a nice beer or shandy also doesn’t hurt!

Ingredients
 
 

Teriyaki Sauce

  • 1/2 cup water
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon mirin
  • 2 teaspoons sriracha
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons cornstarch

Teriyaki Burgers

  • 1 pound ground beef divided into four equal 1/4 pound burger patties
  • Salt and Pepper to taste
  • Garlic Powder to taste
  • 4 pineapple slices
  • 4 burger buns
  • Lettuce leaves any type of lettuce
  • Red onion slices

Instructions
 

  • Prepare the teriyaki sauce by combining water, soy sauce, honey, mirin, brown sugar, cornstarch and sriracha.
  • Bring the sauce ingredients to a boil in a saucepan over medium-high heat. Stir or whisk the sauce until it thickens.
  • Season the burger patties generously with salt, pepper and garlic powder.
  • Gently place the burger patties on a grill or cast iron skillet.
  • Allow the burger to sear for about 2 minutes before flipping them over and searing the other side for another minute (or longer if you prefer your burgers well done).
  • Baste each side of the burger with the teriyaki sauce while it is still on the grill/skillet. When the burger patties are cooked, set them aside.
  • Set the pineapple rings on the grill or skillet. Grill for 1 minute per side.

Assembling the Teriyaki Burgers

    Build your teriyaki burgers following this recommended sequence:

    • Bottom burger bun
    • Teriyaki sauce
    • Lettuce leaves
    • Burger Patty
    • Teriyaki sauce (don't skimp!)
    • Grilled pineapple ring
    • Sliced red onion
    • Top burger bun

    Notes

    * You can use store-bought teriyaki sauce in a pinch. Add 1 teaspoon of sriracha to the sauce to make it spicy.
    * Omit the sriracha to make it a non-spicy sauce.
