This is my current go-to dish when I want a quick, easy and tasty meal. I CRAVE this dish every once in a while. The sauce has so much depth of flavor. The chicken is moist and tender. The best part about it is that it just takes minutes to prepare. No need to marinade. I recommend using chicken thighs for this dish, but chicken breast will also work.

  • Heat oil in wok over medium heat.
  • Add garlic and onion, fry till fragrant (about 30 seconds)
  • Add chicken.
  • Stir-fry until chicken is almost fully cooked.
  • Add fish sauce, soy sauce and oyster sauce, and sugar.
  • Increase heat. Mix well until chicken is fully cooked.
  • Stir in cashew nuts.
  • Garnish with chopped green onions.
  • Serve with rice.
