Pork Adobo is Filipino comfort food at its finest. Tender pork belly braised low and slow in soy sauce, vinegar, and garlic until the sauce is rich, tangy, and deeply savory.

Every Filipino household has their own version, and this one is mine. Simple ingredients, minimal effort, and it only gets better the next day. Don't forget the steamed rice to soak up all that sauce.

Slow cooker beef massaman curry...because some days call for something rich, warming, and completely hands-off.

Tender chunks of beef, creamy coconut milk, soft potatoes, and those deep, aromatic spices. Set it on LOW for 8 hours and come back to this. The whole house will smell incrrrrredible! The curry also tastes even better the next day, so it's a perfect make-ahead dish.

Indonesian Chicken Soup (Soto Ayam) is light yet sooo flavorful. It's also much easier to make at home than you'd think!

The golden broth gets its warmth from a spice paste: lemongrass, turmeric, ginger, candlenuts, and a handful of aromatics blended together and stir-fried until fragrant. A splash of coconut milk at the end rounds everything out. The spice paste makes enough for 2 batches, so you can stash half in the freezer for next time. Future you will thank you!

Serve it over rice vermicelli with shredded chicken, a halved boiled egg, crispy shallots, and a squeeze of lime. YUM!!

Mum used to make this on lazy weekend afternoons, and it's still one of my favorite comfort meals. 

This Spam Fried Rice is simple, quick, and so satisfying. Crispy golden Spam cubes, fluffy scrambled egg, and mixed vegetables all tossed together in a hot wok. Ready in under 30 minutes!

My favorite trick is frying the Spam until the edges turn crispy and golden before adding everything else. Such a simple step but it makes all the difference.
